    red onion: 1 unit, ground turkey: 10 oz, tomato paste: 2 tbsp, potatoes: 1 lb, jasmine rice: 1 c, cumin: 1 tsp, soy sauce: 2 tbsp, mayonnaise: 2 tbsp, dried oregano: 1 tsp, sriracha: 1 tsp, chimichurri: 2 tbsp, sherry vinegar: 1 tbsp, salt: 1 tsp, sugar: 1 tsp, cooking oil: 2 tbsp, butter: 2 tbsp, black pepper: ½ tsp

    Adjust rack to top position and preheat oven to 425 degrees. Wash and dry produce. Toss potatoes with cooking oil , dried oregano , salt , and black pepper . Spread on a baking sheet and roast until crispy and golden ⏱️ 15-20 minutes .

    Meanwhile, rinse jasmine rice . In a small pot , bring water to a boil, add rice, cover, reduce heat to low, and cook until tender ⏱️ 15 minutes . Keep covered off heat until ready to serve.

    Meanwhile, in a small bowl , combine chimichurri and mayonnaise . Stir until smooth. Set aside.

    Heat a drizzle of cooking oil in a large pan over medium heat. Add red onion wedges; cook, stirring occasionally, until lightly browned and slightly tender ⏱️ 4-6 minutes . Add tomato paste and cook until brick red in color ⏱️ 30-60 seconds .

    Add ground turkey , breaking it up with a spoon. Cook until browned and no longer pink ⏱️ 5-7 minutes . Stir in soy sauce , sherry vinegar , cumin , sugar , and remaining salt and pepper. Simmer until sauce thickens ⏱️ 3-5 minutes . Stir in sriracha if desired.

    Fluff rice with a fork; stir in butter . Divide rice and roasted potatoes between plates. Top with turkey mixture, drizzle with chimichurri mayo, and finish with extra sriracha to taste.
